Description

Hill Fire is Pardon My Smoke's answer to the dull, cloying "honey BBQ rubs" flooding the market. This is a real working rub — built on a backbone of five distinct chile varieties that layer deep chili earth with rising heat that never stops climbing. It starts with rich ancho and guajillo, crosses into wood-smoked chipotle warmth, then finishes with a cayenna bite that lingers long after the bark sets. Brown sugar locks in color. Honey powder adds a subtle glaze sweetness without cloying. Kosher salt drives everything into the meat so every bite is seasoned through to the bone. It tastes like a South Texas cookout — smoky, complex, sweet where you expect it, and hot all the way down.

Best For

Chicken thighs, pork, grilled steaks, fish tacos. Any cut where you want a real building burn with an authentic Mexico-Texas profile.

Flavor Profile

Ancho: A rich, raisin-like chili sweetness
Guajillo: A tart, fruity mid-range pepper
Chipotle: Roasted jalapeño powder that adds a deep wood-fired smokiness and a sharp finish.
Honey Powder & Brown Sugar: Paired for real caramelized bark.

How to Use

Hydrate the meat lightly with mustard or apple juice. Apply a generous coat and let it rest 60–90 minutes before hitting the smoke. Cook indirect between 225–250°F for maximum bark; the sugars will caramelize beautifully without burning. Great as a dry rub, under a mop sauce, or as a finishing dust on pulled pork right at the end.
